FlintCreek Cattle Co.

Setting the stage
It was a Friday night and I was down in Ballard visiting Anne. I'd had a pretty good work week and it was feeling like getting out. Anne was tired but I wanted a nice meal so I found myself here. I played with a few different appetizers and tried to understand what this place was all about.
Place
People
There was a couple across the way seemingly on a date but it seemed rather professional where the guy continuously ate huge chunks of meat look like he was going to choke every time instead of cutting them into small bites he would just eat monstrous chunks of beef and just keep chewing.
There was a group of three Asian women to my left who were having a good time taking photos of each other with their phones. Posing seriously while drinking, for example.
There was a group of about a dozen hipster people who were gathering.
Location
On greenwood avenue and 85th. Popular district that's somewhat crowded but felt new and nice.
Table
Upstairs two top with a candle on it.
Parking
I found street parking within a block and it was not too much effort. Free.
Really nice inside. Somewhat fancy. Good vibe.
Music
Rap including Biggie and Bone Thugs.
Water service
Slightly colder than lukewarm still water in a bottle. Not my fave.
Ordering
I got a couple of appetizers just to see what they were all about. Somehow they were both $17 so I must have been in the mood for things that cost $17.
Menu was nice and breadth of ingredients was impressive.
Service
Waitress was very friendly and nice.
Food came out fast.
Food
Fall endive salad
"crispy prosciutto, figs, pecorino, ginger, parsley, banyuls vinaigrette"
Crispy prosciutto
Figs
Pecorino
Tasted really good. Added something and reminded me towards the end of a slivered almonds. Made me want some toasted almonds on the salad.
It was nice to look at and seemed like a fancy dish but overall it felt disintegrated yet tasty but not all that impressive.
Ginger
Parsley
Banyuls vinaigrette
Had never heard of Banyuls.
$17
Totten Kami Iche Mussels
"jalapeño charred lime butter, coriander, grilled baguette"
Mussels
Jalapeño charred lime butter
Coriander
Grilled baguette
Needed more citrus flavor.
Aroma
Smelled great.
Pretty good but was not overly impressed. The portion size was decent but not huge. The muscles were fresh and good. The broth was good but not to die for. Could have used some spiciness and definitely some more citric acid.
$17
Grilled Kuri Squash
Squash
"Red kuri squash is a thin skinned orange colored winter squash, a cultivated variety of the species Cucurbita maxima. It looks like a small pumpkin without the ridges. It belongs to the Hubbard squash group. Inside the hard outer skin there is a firm flesh that provides a very delicate and mellow chestnut-like flavor."
Nicely prepared.
Burrata
Cold, creamy but light in flavor and great.
Really nice charred taste. Delicious.
Pistachio oil
Also have pistachio nuts in there which were toasted and awesome.
Saba
I hadn't heard of saba but I guess it's some form of banana. Didn't taste this but it was a bit of a sweet dish but not too much so it was delicious.
Crispy sage
Didn't notice it.
Sea salt
Drinks
Cab sauv
$16
Pretty big pour in a nice glass. Tasted good.
Pinot grigio
Pretty light flavor. Cold.
